Irish Pub Adds the Round Rock Restaurateur, Bringing Decades of Locally Sourced Dining Experience to Role as General Manager and Executive Chef

ROUND ROCK, TexasCork & Barrel Craft Kitchen + Microbrewery, an Irish gastropub operated by RS3 Strategic Hospitality in Round Rock, is thrilled to announce the addition of Rob Snow as General Manager and Executive Chef. Chef Snow previously owned and operated the Round Rock favorite diner Greenhouse Craft Food and brings more than two decades of experience crafting locally sourced, farm-to-table fare in Austin.

“Being part of the Round Rock community has been the best part of owning a business here,” said Chef Snow. “I am very excited to continue as part of what makes Round Rock special at another unique place like Cork and Barrel.”

Chef Snow opened Greenhouse Craft Food in 2013, and in the 10 years that followed, it became a local favorite for diners in Round Rock, Georgetown and Taylor, offering a variety of signature dishes made from locally grown ingredients. In 2014, Chef Snow opened The Scarlet Rabbit as a side project to bring diners to downtown Round Rock, and in 2016, Greenhouse partnered with RS3 and the Round Rock Express to operate a full-service restaurant in the Intel Club at Dell Diamond.

Prior to striking out on his own in 2013, Chef Snow was the chef at Austin’s Mansion at Judges’ Hill (now known as Hotel Ella) along with stints at Fore (Lakeway), Fleming’s Prime Steakhouse & Wine Bar (Austin), and FIX at The Bellagio (Las Vegas). Local, simple food with big flavors is the order of the day when sitting down at one of his establishments.

Utilizing traditional Irish building methods, the design and architecture of Cork & Barrel was awarded top prize in retail development at Austin Business Journal’s 2022 Commercial Real Estate Awards.

Chef Snow’s culinary artistry will be on display at Cork & Barrel’s Easter Grand Buffet on Sunday, April 9. Reservations for the holiday brunch buffet are available from 10 a.m. to 3:30 p.m. and include a free egg hunt for kids as well as mimosa and sangria specials for adults. The Easter Grand Buffet is $45 per person ($20 for kids under 12) and includes a prime rib carving station, spring vegetable frittata, a waffle bar and more.
